Swift Single Malt Texas Whiskey

Scottish barley, Texan sun, and a gentleman's education in patience.

I arrived in Driftwood expecting Texan bravado and found, instead, a laboratory and a studio sharing one roof. Amanda engineers the water until it remembers the Highlands; Nick chooses his casks the way a painter chooses light. Between them, Scottish two-row barley crossed an ocean to be finished in Oloroso sherry and French Sauternes, and came home speaking with a Texan accent.

Ripe peach and toasted vanilla on the nose; delicate chocolate, a whisper of rose, then brown sugar, oak and warm spice on a buttery tail. A single malt made not for connoisseurs alone, but for the long table, the late hour, and the conversation that outlasts them both.

The Oloroso

Spanish Oloroso sherry cask

Warm and rich. Ripe peach and toasted vanilla give way to delicate chocolate, then brown sugar, toasted oak and warm spice over a buttery close. The approachable one, and none the worse for it.

The Sauternes

French Sauternes cask, Bordeaux

Light, layered, luxuriously smooth. Dried apricot and vanilla custard, a lift of lemon and honeysuckle, buttery caramel beneath. Sweetness and acidity keeping perfect manners at the table.
